Brown ground beef in a skillet over high heat. Drain any excess fat, then stir in onion and taco seasoning. Reduce heat to medium, and cook until the onion is tender. Set aside to cool.

When ready to serve, toss the beef mixture, lettuce, tomatoes, beans, and olives together with the dressing until evenly coated. Toss with the crumbled chips immediately before serving. Sprinkle with shredded cheese to serve.
