I'm sure that most of us could easily sit down and eat an entire tin of smoked oysters. No problem. But when you've got company coming and you have only one tin of oysters, ya gotta find some way to spread the wealth. Well, here you have it! This is a really good spread for crackers, toast points, or even vacant end of deviled eggs! This recipe doesn't make a whole bunch, so get a couple extra tins of oysters and double or triple it!
In a small mixing bowl, combine the cream cheese, mayonnaise, chopped olives, parsley, soy sauce, hot sauce and garlic until the spread is smooth. Gently stir in the oysters. Cover and refrigerate the spread for at least one hour before serving.
A little smoke from the oysters, the coolness of the cream cheese and that wonderful little spark at the back of your tongue from the Tabasco - What's not to like?
