This super easy, flavorful chili includes healthy ingredients such as lean chicken, black beans, onion and tomato. It tastes wonderful over tortilla chips and when topped with Colby jack cheese and sour cream.

Ingredients
Makes: 2 quarts
2 teaspoonsvegetable oil
1 cupchopped onion
2 teaspoonsminced garlic
1 teaspoonground cumin
1 teaspoonrubbed dried sage
1 (14 ounce) candiced tomatoes with juice
2 (14 ounce) cansblack beans, rinsed and drained
1/2 cupwater
1/2 teaspoonsalt
1/4 teaspoonground black pepper
1 (10 ounce) canRo*Tel(R) diced tomatoes and green chiles
Heat the vegetable oil in a skillet over medium heat. Stir in the onion and garlic; cook until the onion begins to turn translucent, about 5 minutes.

Stir the onion mixture into a slow cooker with all of the remaining ingredients except for the chicken breasts. Stir the mixture until evenly combined, then set the chicken breasts on top.

Cover, and cook on High for 1 hour. Reduce heat to Low and continue cooking 5 hours more.

Shred the chicken breast and stir back into the pot to serve.
