In a large mixing bowl, combine the ground beef, egg, bread crumbs, pepper, 1/2 teaspoon of the salt, onion powder, garlic powder, and Worcestershire sauce. Form the mixture into 4 balls, and flatten them a bit into somewhat rectangular "steaks".

In a large skillet over medium heat, heat the oil. Fry the patties in the oil until the patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate and keep them warm.

Still over medium heat, add the onions to the pan and cook them until they are softened and opaque, about 5 minutes. Stir in the flour, coating the onions thoroughly and stirring constantly for 2 minutes. Gradually mix in the beef broth and sherry, scraping any browned bitts from the bottom of the pan. Check and adjust the seasoning, adding 1/2 teaspoon black pepper. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens.

Turn the heat down to low, return the patties to the gravy, cover, and simmer for another 15 minutes.
