Fried Meatballs. These are perfect for a snack, appetizer, or as part of a main dish. They hold up their coating in sauce as well so they can be part of your sauce :-)

Ingredients

2 pounds ground beef your choice quality
8 eggs
3 cups Italian style bread crumbs
1 cup milk
1 cup flour
Enough oil for your choice frying method, whether deep fryer or skillet.

Preparation method

1. In a large bowl combine meat, 4 eggs and 1 cup of bread crumbs. Work mixture until all ingredients are well mixed.
2. In a separate bowl combine the milk with remaining eggs and whisk together.
3. put remaining breadcrumbs along with the flour into a large ziplock bag and shake to mix.
4. Shape into around 40 small meatballs. Place meatballs on a seperate plate after forming them.
5. Heat oil in skillet or deep fryer to 325 degrees F.
6. Drop them into the ziplock bag with the bread crumbs, no more than 10 at a time, and toss them around getting a good coating of breading on them.
7. After coating all the meatballs, dip them in the egg/milk wash and put them back into the bag to give them a second coating.
8. Begin placing them in the heated oil.
9. Cook them to a golden brown, being sure to stir them if using a skillet, average time for each batch was 5 minutes, if you do 10 to a batch.
10. Drain after taking out of the oil.
