Pea-Corn Salad

Ingredients

• 1 (15 ounce) can sweet green peas, drained
• 1 (15.25 ounce) can corn, drained
• 1 (4 ounce) can sliced mushrooms, drained
• 1 or 2 hard boiled eggs, coarsely chopped
• 2 tablespoons chopped pimentos from a jar, or to taste
• 1/3 cup chopped onion, or to taste
• 1/3 cup mayonnaise, or to taste
• 1/4 cup sour cream, or to taste (optional)
• kosher salt and pepper to taste
