But when the Irish came to America, they found that their beloved bacon was rather dear, while corned beef was a cheaper alternative. This dish is a truly beautiful, all Irish, alternative to the corned beef supper. This uses a whole piece of bacon, rather than slices. You may need to special order this from your butchers.

This recipe initialy came from my Ukranian Father in Law taught to him as a child. He called it "Parahai" and I have no idea how to spell it - forgive me if it's wrong, but the recipe has been enjoyed by my family and my grandkids as a favourite. Time consuming to make but well worth the delight in eating. Leftovers are panfried the next day - if there is any leftover! Serve hot with a little butter. Garnish with a little reserved bacon and onion if you wish.

My fathers and his Chinese "Brothers"recipe for the best deep fried shrimp, now famous in our town. You can even put these on the grill. For a sauce ketchup and horseradish work great but these are great by themselves!
