J. Paul's Cowboy Coffee
Whenever we work cattle, I have to hire extra cowboys. They show up early expecting cowboy coffee, and I'll cook them a little something over the fire for breakfast. They've made it clear: "No cowboy coffee, no cowboy work!" It's always ready when they get here about daylight. I just have to put up with the comments like, "It'll hold up a horse shoe" or, "You don't drink his coffee, you twist off a cup and chew a sip offa the top!"

New Mexico Green Chili Breakfast Burritos with Sausage and Jalapenos
Green Chili is very popular where I live in New Mexico, you can find it in almost anything. I decided to pair up our state's famous green chili with eggs and cheese for a delicious breakfast burrito. As a nod to our neighbor state, Texas, I added jalapenos which gave the burritos a great kick. It's perfect "man" food for breakfast - it fills you up, has some heat, and doesn't take all day to prepare. Also, this breakfast is portable, wrap them tightly in foil and you are good to go!

Carne Asada tacos. Very easy entertaining recipe. If you can wield a food processor and a set of tongs, you are set. I always kick off the summer camping season by doing these over the campfire. The nice thing about this recipe is that you can do most everything beforehand, leaving you time to quaff a few with your buddies. Perfect for tailgating or camping where people stand while they eat.

This is a vinegar and mustard based "Carolina Style" sauce, as opposed to most ketchup and molasses based sauces. The combination of sweet and tangy flavors brings out the absolute best in grilled pork and chicken. This is the only sauce I use for my ribs!
