Slow Cooker Spicy Green Chicken Chili
This started out as white chicken chili but turned into green chicken chili. It's not too spicy, the spice isn't in your face, but there is some heat on the back end that lingers.
Pea-Corn Salad
A friend's father passed away and I was asked to attend the funeral remembrance with a dish. I thought this up on the spur of the moment and it was such a hit that I had to give out over 2 dozen recipe copies. It was gone in a jiff also. I truly didn't expect that response to it, but it is very good.

A great dish for game day or surprise company. I really love this dish because it is so simple to make, yet it tastes fabulous. It freezes well, so when you have time on your hands, you can make a couple up and freeze them. Then when you are harried or just plain tired, just pop it in the oven and have a wonderful meal. It is also well within anyone's budget. Some like it better the second time around. Any kind of salad goes well with it.
