My fathers and his Chinese "Brothers"recipe for the best deep fried shrimp, now famous in our town. You can even put these on the grill. For a sauce ketchup and horseradish work great but these are great by themselves!

This is the basic Chinese recipe for deep fried bananas (which are covered in dough). The recipe is easy and not strict but results in a delicious dessert. I recommend that you try a variety of fruits besides bananas because they also turn out nice. If you like you can serve it without the caramel. Also the dough can be made with rice flour if you don't have potato flour.

First rule of beer batter: Beer batter is not complicated, it should only contain beer and self-raising flour. Second rule of beer batter: The beer should be cold. Third rule of beer batter: You DO NOT need to sift the flour, and don’t over-whisk it. A few lumps actually makes for a better texture. Fourth and most important rule of beer batter: It is important to choose the correct beer according to what you are going to cook. As any ingredient ranges in texture and taste, so does beer.

I made these to stand up to my best hamburgers. Prepared as directed, they come out very crispy and flavorful. Because potatoes are very starchy they tend to take on the flavor of your oil through absorption. You can use that to your advantage by flavoring your oil with different spices or ingredients to suit your tastes. A little minced garlic or onion is sometimes a nice variation.

Wings and drumettes, deep fried to a golden brown and coated with hot sauce. Yummy!!!! Yummy!!!! If you like it hotter, by all means dump more hot sauce on. Serve with Ranch or blue cheese dressing. Enjoy!!
