This makes a great side dish, but once the kids try it, it will become their main dish. The directions were made simple enough for a ten year old or a real beginner cook wanting to go beyond take-out or boxed dinners. Great for pot luck dinners too.

Scratch batter made as easy (well, almost) as box mix, from a recipe so stupid simple I carry it around in my head. You can, too, if you memorize the three digits above -- 2-1-1 -- the amounts of the three key ingredients for a batch good for two or three medium eaters. Think of 2-1-1 as a scalable algorithm for breakfast. Go bigger or smaller as needed.

I was going to make a pizza turnover for the kids, then it hit me.... why not top the top crust? The Pizza in a Pizza was born. Everyone who has tried it has loved it! And the best part is you can top and stuff it any way you'd like! We make our own whole wheat pizza dough in the bread maker and our own low-sodium pizza sauce. We love this with peppers onions and low-sodium turkey bacon. It's actually a pizza that's pretty good for you--just remember, each piece is like eating two slices of pizza!

Great spread with cream cheese and/or Nutella or just plain butter. Toasts up great. My kids loved it with peanut butter.
