Chilled coconut milk and honeydew with an infusion of mint and melon liqueur makes a delightful start to a meal. Served in a chilled small soup cup and garnished with a sprig of peppermint. Every time it gets wows! Volume varies with the size of the melon. I use 5-ounce servings.

This easy to prepare marinade will make any steak spoon-tender. It will also make your friends & family scratch their heads when you tell them your "little secret". This is probably enough for 4 - 6 steaks. Make sure marinade covers all the steak.

This recipe is ideal for those whose stomachs cannot handle balsamic vinegars - like mine! The cranberry and cider vinegar compliment lighter main course meals. Please note the overnight storage in steps 1 and 2 is optional, but the longer the oil and vinegar sit in the fridge, the better the flavors combine.

This is a very traditional recipe usually served at Christmas. Back home, the meat comes preseasoned and prepared, and just needs to be dropped in the pot. But here you will need to do the work for yourself. It's only about 2 minutes of work a day for ten days, but well worth the effort! Bear in mind, this is a lot of food, so you may need an industrial stock pot to cook it in...

This is the most wonderful ceviche ever. It is thick enough to be eaten as a meal and it is the only recipe I have found that kid's enjoy. It was made by Leo Longoria from south Texas and is perfect in every way. Any fish will do but I recommend Red Fish first. I have also tried with Crappie and it is wonderful.
