Finadeni (Guamanian All-Purpose Sauce)

No island BBQ would be complete without finadeni. This all-purpose sauce is used to flavor rice, soups, dipping and is excellent for marinating chicken, beef and pork. If you like, I have seen other people substitute the thinly sliced onions with chopped onions or chopped green onions.
Spring Hill Ranch Homemade Ketchup
You haven't tasted ketchup until you've tasted *homemade* ketchup! At about 1/3 the cost of the brand names (you wouldn't actually even think of using a generic brand, would you?!), there is no reason why you or your family or crew should suffer through life without this stuff! It keeps well in the 'fridge for a few weeks, but rarely is still around by then! This recipe makes enough to about fill an emptied (and washed out!) 32 ounce squeeze bottle from the store-bought stuff.

This sweet, tangy barbeque sauce is as simple as stirring a few ingredients together in a few minutes. Add another 1/3 cup of Irish whiskey to use this as a marinade.
Mango Jamaican Jerk Chicken Thighs
Big time Caribbean flavor. Nice thing is you break up the cooking time between the morning, when you'll make the marinade, and the evening, when you'll make the sauce and cook the chicken. Would be easy to double or triple this for a group. Also--if you prefer grilling to broiling, cook the chicken thighs that way.
