This recipe is a variant of Pam Anderson's Wonderful Meatloaf that I made into a healthy meal by substituting ground turkey and adding broccoli plus other ingredients for a good healthy meal for those watching their waistlines or their health.
I always found Turkey Meatloaf to be quite disappointing. The flavor is usually lacking as well as the texture. Well I have developed this Turkey Meatloaf that has a great texture and a surprisingly good flavor (My brother couldn't even tell that it wasn't beef)! This is my mother-in-laws special meatloaf. Easy to make and great for picky eaters (like my wife). Leftovers make great meatloaf sandwiches. I usually double this if for 4 or more. I start cooking for about 45 minutes, and then keep checking the middle for doneness every 15 minutes or so.
