My wife does not like peanut butter, nuts, some dried fruits, or chocolate chips, so I have had to modify my recipe so she could take these tasty and healthy snack bars to work. With as many substitutions possible as your imagination allows, you can change the recipe to fit your on-hand pantry items.

Always a Christmas treat when I was a kid - A shredded coconut covered chocolate roll mixed with walnuts, shredded coconut, and miniature colored marshmallows. My mom used to always make these when I was a kid - I'm not sure where she got the recipe from. 2 rolls was never enough, because everyone would devour them instantly.
