Chilled Minty Coconut Melon soup
Recipe by:
ONEOFFOUR
Chilled coconut milk and honeydew with an infusion of mint and melon liqueur makes a delightful start to a meal. Served in a chilled small soup cup and garnished with a sprig of peppermint. Every time it gets wows! Volume varies with the size of the melon. I use 5-ounce servings.

Crusty Diabetic Crustless Quiche
Recipe by:
Jack C
This is a delicious diabetic and diet-friendly recipe for quiche. I created the recipe for two servings for my wife Laura and me. I put it together on Saturday evenings; cover each bowl with plastic wrap and refrigerate. When I get up on Sunday morning, I let Laura sleep in while I make the coffee and put the quiches in the oven. We love the crusty texture that is created on the outside edges when cooked in the Pyrex bowls. The inside stays moist and tender.
Derrick's Restaurant Salsa
Recipe by:
Derrick
I have boiled, roasted and grilled more tomatoes, peppers and garlic trying to find the perfect salsa I get my favorite Mexican restaurant. While I came up with some pretty good salsas, this is finally it. The color and consistency tipped me off as to where I was going astray. And while I had to move away from the fresh tomatoes, it was worth it.

Low-Fat Cream of Cauliflower Soup
Recipe by:
HSILCOX
I created this recipe today, combining aspects from similar recipes I had seen on Allrecipes and elsewhere ... and accommodating the contents of my larder. If you like cauliflower, this is a great fall/winter warm-you-up. Portions are an estimate, but it made a small vat of really aromatic soup. Enjoy!

Non-Fat Salad Dressing
Recipe by:
QAEDON
I'm tired of store-bought non-fat salad dressing. What the heck is guar gum?! This recipe uses refrigerator and pantry ingredients for a good, clean dressing that is non-fat but packed with flavor. Especially great for seafood salads.
Roasted Beef Heart
Recipe by:
wsf
As far as organ meat goes, heart is probably some of the most tame you can try. When I first had this, I honestly thought it was an elk roast, or perhaps moose. It was that good! Bear in mind that it is a very low-fat cut, so over cooking will dry it out quickly. This is one I have made a few times for a Sunday roast. When I didn't tell people what it was, they assumed it was just a beef or venison roast!
Summertime Shrimp Salad

loki2404
