This is a method of bean preparation using black beans, although you can substitute any dried beans. Easy, but it takes awhile.
Just Killed: Carne Asada Torpedo
A spicy meat-filled sandwich that bites back! Chewy sourdough rolls filled with grilled pepper-infused beef, cooled by buttery slices of ripe avocado. Red onions add contrasting sweetness and crunch.
San Ignacio Green Chile Cheeseburgers
A twist on the famous New Mexico green chile cheeseburger, this stuffed burger is a favorite at our ranch's summer get-togethers. The cream cheese mitigates the heat from the jalapeños, but leaves the wonderful flavors of them and the green chilies intact. The chipotle mayonnaise, filling or even the uncooked burgers themselves can be made a day ahead and kept sealed in the 'fridge overnight. Just get them out of the 'fridge about half an hour before grilling.
Tequila Montreal Steak
Steak marinated in a bath of tequila and assorted seasonings. I've found that this makes a great steak fajita also!
Spring Hill Ranch Cranberry Sauce and Salsa
Who in the world would eat that stuff called cranberry sauce that comes in a can when this is soo dad-blasted easy to make?! This Southwestern cranberry sauce goes great with turkey, chicken, pork and even some fish.
Spring Hill Ranch Terciopelo Jalapeño
You no doubt have heard of New Mexico green chile and red chile sauces, but did you know there was third sauce, a white sauce? Well, there is, and it is called "Jalapeño Velvet". It is a traditional sauce that sadly is not found in many restaurants anymore. Personally, it is one of my three favorite New Mexico suaces!
San Ignacio Shrimp Salsa and Ceviche
Actually, a true salsa is pretty smooth in texture, about the consistency of a milk shake, and is often cooked. Since this has finely minced pieces throughout and is not cooked, it would really be considered what is called a pico de gallo or salsa fresca. Chop the pieces just a little bit larger and you have a ceviche! This is great as a chip dip or condiment on burgers or in tacos.
Site Sunday Shrimp Dip
Back in the day I had to work, it was 12-hour shifts, 7 days in a row. On Sundays when we were on daytime shifts (we worked nights, too, but not on the same week!), we'd get together and bring in a really nice dinner. This dip was always required, not just by my crew, but by the day-staffers that came in on Monday, too!
