Let's face it. Summer is a time for fun, and some parents don't want to stay in a hot house all day and cook, while some just don't have the time or energy. This is the kind of meal that you just pop in the slow cooker and do whatever you and your family have to do for 6-8 hours. Then just put it in some lettuce wraps and eat! It's easy, fuss-free, and I think it tastes great.

I came up with this recipe by just messing around trying to find a good recipe for chili, and so far every time I make it people line up for a bowl...hope you like it! I usually let mine cook for minimum of 10-12 hours, but i feel the longer it cooks, the more the it brings out all the flavor. This is as mild tasting chili or as hot as you want to make it. I really don't like it too hot so I find my chili to be spicy enough for chili but not so bad that I start sweating.

Nice hearty crock pot chili recipe with a hint of salsa. My family loves it - just the right heat and spice level that even the kids will devour it. Serve with corn chips and corn bread if you like. This is not an overly hot chili recipe I usually use Medium salsa and 1 can of mild and 1 can of hot chilies. Just the right amount of heat and spice so can be enjoyed by all.

My all-time favorite recipe, which my Dad makes every year on New Years Day for the college Bowl games. I prefer the ham hocks, but you can substitute a ham bone for them. To slice the sausage easier, put it in the freezer for about 20 minutes first. The longer you cook it the creamier the beans get; I love to let it simmer all day, the smell is wonderful. Serve with hot rice.

This is a very spicy but not too pepper-hot. If you think this might be too pepper-hot just reduce the amount of jalapeno peppers.You can always add some red pepper to kick it up. I serve mine with grated Colby Jack cheese and corn chips.

Serve this chili with Mexican blended cheese, sour cream, tortilla chips and hot sauce. When ready to eat, mix the cheese into the chili in your bowl, put a dollop of sour cream on top and dabble the hot sauce sauce to taste - I personally like Cholula(R). It is great to use the chips to eat with until you get towards the bottom of the bowl.
