Derrick's Restaurant Salsa
Recipe by:

I have boiled, roasted and grilled more tomatoes, peppers and garlic trying to find the perfect salsa I get my favorite Mexican restaurant. While I came up with some pretty good salsas, this is finally it. The color and consistency tipped me off as to where I was going astray. And while I had to move away from the fresh tomatoes, it was worth it.

This salsa can be made by anyone that owns a decent knife & a cutting board. You don't need to know a thing about cooking, just know how to chop. I've had just 4 people eat the entire batch, it was so good. It tastes even better the next day!
My Peach Salsa
This is a flavorful salsa that begins sweet and ends with fire. great for parties.

Texas meets Asia in the best combination of cuisine. Make these for your next party and everybody will be asking for more.
San Ignacio Shrimp Salsa and Ceviche
Actually, a true salsa is pretty smooth in texture, about the consistency of a milk shake, and is often cooked. Since this has finely minced pieces throughout and is not cooked, it would really be considered what is called a pico de gallo or salsa fresca. Chop the pieces just a little bit larger and you have a ceviche! This is great as a chip dip or condiment on burgers or in tacos.
Ground Meat and Chili Mix Queso
Great way to feed the masses while watching the big game or when you need your cheese fix. I prefer to use ground turkey or ground bison meat. Makes it seem a little bit healthier.

Great Finger food for parties or tailgates. Serve with either ranch dressing or salsa for dipping.
Spring Hill Ranch Baked (or Grilled) Stuffed Jalapeños
Here's another version of the always-popular "jalapeño popper". Bake 'em in the oven if there's 5 feet of snow outside or if your grill space is limited. You can cut the recipe in half or even quarters without degrading the quality, too! Check the intensity of your jalapeños before you make 'em and add a diced up chipotle or two (or 1/4-1/2 teaspoon cayenne pepper) to the stuffing if they are too mild.
Site Sunday Shrimp Dip
Back in the day I had to work, it was 12-hour shifts, 7 days in a row. On Sundays when we were on daytime shifts (we worked nights, too, but not on the same week!), we'd get together and bring in a really nice dinner. This dip was always required, not just by my crew, but by the day-staffers that came in on Monday, too!
