Can Opener Chicken Tortilla Cheese Soup

Very, very, good as a leftover once it has a chance for the flavors to blend together. Perfect for a cold day. I freeze the extra in single serving size containers and heat in the microwave for a quick, hearty lunch!
Spring Hill Ranch Chorizo Soup
Another way to use up that leftover meat is to make a soup out of it. But why be boring about it? Add some spicy Mexican chorizo to it and you've got a really great soup! It's really easy and quick to make and warms you up nicely! Note that you can use meat, shrimp or both along with the chorizo in this soup. (PS: You can also make this in your slow cooker. See the "Alternate Method" below for the directions!)
Ground Meat and Chili Mix Queso
Great way to feed the masses while watching the big game or when you need your cheese fix. I prefer to use ground turkey or ground bison meat. Makes it seem a little bit healthier.
Pork in Green Sauce

Shredded pork mixed in chili verde, served in tacos, burritos, or just by itself as the main course.
Easy Brisket Taco Meat
This is a simple and tasty way to make brisket tacos. This is how I make them to sell at my restaurant.
Slow Cooker Shredded Beef Burritos
Cooking for a crowd? This burrito recipe will feed a whole soccer team. Mexican spices give the flavor, sitting overnight in a slow cooker gives amazing tenderness.
