In a recent trip to San Francisco, my brother and I frequented a restaurant in the Haight District for breakfast. The inspiration for this came from that trip. Very simple. This is a delicious diabetic and diet-friendly recipe for quiche. I created the recipe for two servings for my wife Laura and me. I put it together on Saturday evenings; cover each bowl with plastic wrap and refrigerate. Simple breakfast, like an omelet but with the eggs substituted for haloumi. Haloumi browns on the outside and doesnt melt, allowing you to mix it with ingredients in the frying pan. Don't be put off by its slightly rubbery texture - it is supposed to be like that and the taste is well worth it. Can be served on toast, or by itself. The haloumi is a good substitute for those who dont like eggs, and tastes good enough for those who do.

Moon Eggs are a long time family favorite, usually eaten for breakfast. A sweet, egg, milk, and flour, baked dish, eaten with powdered sugar and bacon bits. When cooked the batter rises up on the edges and looks like a crater. I've never found anything like this anywhere and receive odd looks whenever I ask anyone if they've had moon eggs.
