It was made by Leo Longoria from south Texas and is perfect in every way. Any fish will do but I recommend Red Fish first. I have also tried with Crappie and it is wonderful.

I have made this using different flavors of Jell-O(R) and yogurt. The lemon is real good if you add some zest and a little juice. Try orange flavor with some orange pieces mixed in or use your imagination to come up with different flavors. I always make my own graham cracker crust and sometimes have used half graham crackers and half Ritz(R) crackers. You can also use a short bread crust.
