Have left-over white rice from the night before? All over the Philippines, Sinangag rice is served as breakfast in homes and TapSiLog (Tapa, Sinangag, Longganiza) stalls that are often 24-hour establishments catering to night workers, taxi, and truck drivers. This recipe is unique to me; everyone I've served it to keeps asking me to cook it for them again. It's a great "energy" food for people who are physically stressed.

This was a dish we had on a recent trip to Thailand. I've invented my own recipe based on the flavors I remembered and my knowledge of Thai cooking. It's a great side dish with a Thai meal. You can increase or reduce the fish sauce to taste or add some fresh chiles to this if you want a little heat. Serve, and listen for the ooo's and aaaa's.
