A surf-and-turf version of Mexico, made in Oregon by a guy who knows nothing about Mexican culture!
My family loves Mexican food. I have seen a few different Enchilada Casserole recipes around the net so I played around with a few and got this tasty treat! Great on top of Spanish Rice with sour cream on top!

These chicken enchiladas are delicious and yet are high in protein and fiber--I have never left a potluck with anything left!
Easy and tasty.
Almost as easy to make as mac n' cheese, this dish is inexpensive, tasty and quick. My mom used to make it when I was a small kid. Kids LOVE them!
This easy Mexican recipe came from a close friend, Cindy Lopez.

You'll have hot, tasty enchiladas sooner by using pre-made spices and sauce. Less ingredients to buy, and just as good for a family dinner.
