Almost as easy to make as mac n' cheese, this dish is inexpensive, tasty and quick. My mom used to make it when I was a small kid. She learned the recipe when she was a waitress at a roadside diner in Texas in the early 1960s. They're still a favorite comfort food of mine. By the way, they're nothing like Mexican Enchiladas. Kids LOVE them!
