This cheese dip is easily the best that I've ever had and being a college student, I've had quite a lot. The only reason there are ever leftovers is because this dip is so delicious and filling. I recommend Mission(R) or On The Border(R) chips because this dip is rather thick and you need a durable chip that wont break off too easy!
The "Not Even Close to Authentic" Quesadilla
I'm not really sure what to call this thing. Quesadillas are tortillas with cheese and stuff in them. This thing is made of tortillas with cheese and stuff in them. So I guess it's a quesadilla. You'll grill sausages, wrap them in tortillas, grill again, then wrap in cheese- and onion-stuffed tortillas and grill once more. Melty, filling, and delicious.

My better half could not eat potatoes for a year (it's a long story), and used to make her own potato chips (crisps) from other sources, such as sweet potatoes and beets. The secret to this recipe is to slice the vegetables ultra thin. I use a mandolin or the slicing blade on my food processor. This makes a unique appetiser for a Superbowl party!
