San Ignacio Smoked Beans
Here's a bowl of smoky, spicy, succulent beans you'll want to make a meal of, though they are great as a side dish, too! Yeah, there are quite a few ingredients and they do take a bit of time to prepare, but you get enough for a big "do" or enough to freeze in serving-sized quantities and eat for a long time. They are a staple around here for summer get-togethers as well as for winter snow days. This recipe contains both regular and faster pressure-cooker instructions. (See Footnotes)
Spring Hill Ranch Chili Size
Believe it or not, some burgers are meant to be eaten with a knife and fork. One of my favorites is that way - this one! It's a grilled burger served open-faced and slathered with a good helping of chili that's homemade especially for this application. It takes a little effort to put it all together, but nothing about it is difficult...and it is soooo worth it! Serve with an ice-cold beer and a little greenery on the side.
Oh Ya, Real Good Chili
Everyone thinks of Texas when they think of Chili, but we eat lots of it up here in Minnesota where it's cold 9 months out of the year. I like this version because you don't have to do much measuring and it sticks to your ribs real good.
