This is a simple and authentic recipe for Sopa de Lima. This soup is a staple in Yucatan cooking and the tastes are a diverse as the day is long. This is my favorite way to make it. It's as spicy as is it hearty and you'll feel better knowing it is loaded with Vitamin C from the Jalapeño and Lime Juice. This soup is very popular in Northern Thailand and the recipe varies slightly depending on who's making it. Typical of Thai cooking! Steps 1 through 4 can be done well in advance. The soup will become tastier the longer it sits. Just reheat it and go to step 5. Serve with lots of Singha beer!
