A spicy chicken and vegetable soup balancing many flavors, including complex citrus and more earthy tastes contrasted by spicy components. This is a very aromatic meal, and is especially good for opening up the sinuses of cold sufferers. This is loosely based on a few varied Thai soup recipes, and from my own tastes and desire to try new things. Since it is elementarily based from Thai recipes I decided to name it Phet gai soup: "Phet" means "spicy hot," and "Gai" means chicken in Thai.

This is a simple and authentic recipe for Sopa de Lima. This soup is a staple in Yucatan cooking and the tastes are a diverse as the day is long. This is my favorite way to make it. It's as spicy as is it hearty and you'll feel better knowing it is loaded with Vitamin C from the JalapeƱo and Lime Juice. Enjoy this piping hot with a cold margarita and tortilla chips and feel the warmth of the Caribbean breeze.

This soup is very popular in Northern Thailand and the recipe varies slightly depending on who's making it. Typical of Thai cooking! Steps 1 through 4 can be done well in advance. The soup will become tastier the longer it sits. Just reheat it and go to step 5. Serve with lots of Singha beer!
