Rik's E Z Taco Salad

Fast and easy, it's also delicious and everyone can have it the way they want it. This is infinitely flexible as you can add or remove ingredients to suit the tastes of your family. Some suggested additions: Salsa, Guacamole, Ranch or Thousand Island dressing, green or black olives, kidney chili beans, fresh sliced mushrooms, tomato wedges. If you can put it on a salad, it'll pretty much go with this!

My family has been making this recipe as long as I can remember. Now that I have taken over a good part of the cooking I still think it is the best. Use polenta rather than finer ground corn meal. I sometimes add 1/2 cup whole kernel corn to the polenta.
The Taco Omelet

Mixing flavors of egg, ground beef, salsa, and sour cream, sharp Cheddar cheese.
Campfire Carne Asada Tacos
Carne Asada tacos. Very easy entertaining recipe. If you can wield a food processor and a set of tongs, you are set. I always kick off the summer camping season by doing these over the campfire. The nice thing about this recipe is that you can do most everything beforehand, leaving you time to quaff a few with your buddies. Perfect for tailgating or camping where people stand while they eat.

Jaybird's Eat-'Til-You're-Beat Nachos
Recipe by:
William
This creamy, spicy, slightly sweet nacho cheese sauce uses something I've never seen in a nacho cheese sauce/dip: cream of asparagus soup. It adds to the creaminess and some of the very slight sweetness. If you don't eat meat, this dip is great by itself.
