Liberate yourself from the tyranny of canned peas; welcome to the wonderful world of fresh and frozen peas, juicy with some snap remaining.
A great alternative to a standard rice accompaniment.
A delicious variation of turkey chili that uses a lot of beans and is loaded with onions, garlic and hot peppers. Sprinkle some shredded cheddar and fresh cilantro on top if you like.

If the Doc says heart-healthy, this is a great low-sodium side dish. Simple and fast to make, but very tasty and easily modified to your individual likes.
This is a quick side dish that is great with any Mexican dish.
Tasty, inexpensive chicken and gravy combo. Delicious over mashed potatoes or buttered toast. Makes enough for lots of meals. This is another of my attempts to recreate and improve meals my mother made in my childhood.
This is a one dish meal. My grandmother made this dish when my dad was growing up. It is a family favorite to this day.
This is my updated and simplified version of my Grandma's chickpeas that were always comforting. A rustic dish that is specially good in winter and very easy to make. Serve along with a good rustic bread, olives, cheese and a good Spanish wine.
An easy to make homemade vegetable soup. The longer it simmers, the better it tastes. Freeze leftovers and the taste quality only improves. All the ingredient measurements should be adjusted to your taste.
This recipe was developed by my Aunt Myra from Georgia and has been a mainstay throughout our large family for decades. It is a perfect side dish for potlucks, barbecues and gatherings. It can also be enjoyed as a light main course, especially in the summer when it is so refreshing. It is simultaneously crunchy and creamy and the layering makes it look nice, particularly when made in a glass bowl.
Hearty, sweet, and vinegary salsa, perfect for everyday snacking or for parties.
This is an improvised salad that came from various sources but added my own touch to it. It's warm and makes a very light and savory appetizer.
I was looking for a recipe that would use some ingredients I had around the house. I couldn't find one for a hamburger and rice casserole, so this is the result. It is tasty and easy enough to prepare.
Sweet apples and vegetables combined to create a traditional Polish vegetable salad. For convenience, frozen mixed vegetables (peas, carrots, lima beans, corn, & green beans) are used. This is my mother-in-law’s recipe, made in our house at least once a week and kept in our refrigerator at all times. A great accompaniment to meat dishes, this salad is a sure winner at any barbeque. The salad is served cold and gets better the longer it sits and marinates.
A light and flavorful dish. If you wish to you can put the mix into a blender or you can serve it how it is, your decision. Feel free to experiment, swap anything or add what you wish. Enjoy.
This is a great side dish which is unusual and may get comments which question the flavor. However, for those who like this dish it is wonderful.
