Let's face it. Summer is a time for fun, and some parents don't want to stay in a hot house all day and cook, while some just don't have the time or energy. This is the kind of meal that you just pop in the slow cooker and do whatever you and your family have to do for 6-8 hours. Then just put it in some lettuce wraps and eat! It's easy, fuss-free, and I think it tastes great.

Easy, feeds a crowd. I make this all the time for the guys at work. I watch for the full loins to go on sale. After feeding the crew at work (12- 15 people) I still have leftovers to bring back home. You can add the bbq sauce into the meet after it is cooked, or have it on the side. Great both ways. Serve on buns and enjoy.

An easy recipe with great honest flavor that lends itself to personal tweaking. Perfect on a gas grill. My favorite choice for BBQ sauce is a half & half mix of Sweet Baby Ray's(R) and Stubb's Original(R). Italian dressing may also be halved with the vinegar as desired. Red wine vinegar is the key, though. This a great easy meal for two people. Adjust recipe as needed for more--one of those recipes that you can't go wrong with.
Carolina Style Crispy Pulled Pork Eggrolls with Fresh Cole Slaw
We make this every time the guys come over for a game. Everyone loves these eggrolls and they are super easy to make. This recipe uses cooked pork shoulder. We usually cook our own (there is nothing like having your entire house smelling like BBQ pork all day long), but you can easily find pre made pulled pork at the super market.
