No, we don't have any armadillos up here in the mountains, but we do have quite a few friends and visitors from Texas, where armadillos abound. We know they have to dodge hundreds of these hard-shelled critters to get here, and in honor of that, we make up these Armadillo Turds for parties. They are a direct relative of the famous jalapeƱo popper, but normally a bit milder. Of course, you can jack up the heat as much as you like...to the point of adding Tabasco sauce to the cheese filling or even substituting habaneros for the jalapeƱos.
