No island BBQ would be complete without finadeni. This all-purpose sauce is used to flavor rice, soups, dipping and is excellent for marinating chicken, beef and pork. If you like, I have seen other people substitute the thinly sliced onions with chopped onions or chopped green onions.

This is the most popular meal requested by my family. I can almost guarantee this recipe will be served at all of our parties. Why can't I just make hamburgers once in a while? The achiote paste can be obtained at most Mexican Specialty stores and some supermarkets. This recipe can be doubled or tripled with the exception of the cinnamon. When doubled, I usually add about 1.5 times the amount.
