This recipe does not call for beans, and I recommend you try it that way. They can always be added later if someone (like my wife) insists on ruining it with beans. While deer hunting on the Nueces River, someone shot some 'camp meat', and I had to cook it up. I diced it into 1/4 inch cubes, browned it in a cast iron pot over an open fire, and went from there. I didn't have oregano, corn meal, crackers or garlic, but served flour tortillas with it and everyone enjoyed it.

If you like deer meat, you have to try this recipe. Every time i make this it never lasts more than 15 minutes in my house. All ingredients can be combined and cooked in crock pot on medium heat for better flavor.

This Cornish game hen recipe was always made X-Mas Eve along with baked vegetables. After we all had our fill, the family members would each get to open a special gift, and when we were done we put cookies out for Santa and went to bed. Next day we had our home-smoked ham. Really Neat Childhood Memory.

Start this recipe a little early in the day so that it will be ready by supper time. It has to be one of my crowning achievements. I have two stepsons who are the most finicky eaters I've ever seen. They've tried some of my recipes for wild game, but didn't like any of them; until I made this. I was shocked to see both of them go back for seconds. I hope everyone enjoys this. It does have a lot of ingredients, but trust me it is worth the time!

Trellys Roast Wild Duck

Duck roasted can be very dry but this is where the oven bag helps. I have suggested 2-4 ducks as one may cook too tough to eat. When slow cooked, they will fall apart and become very tender. Remove the fat from cooled juices and store duck in this . It is very good cold. To help remove pin feathers, try singeing over a gas flame.
Kung Pao Pheasant
This is a really tasty way to prepare wild pheasant. I just debreast the birds and use the meat for this dish. I serve with rice.
Super Easy Duck Appetizer
This is a super-easy appetizer or dinner you can prepare from wild duck. No need to de-feather the bird, just remove the breasts and you are good to go. I serve with hot sweet mustard on the side for dipping. For dinner, you can just serve with buttered noodles or rice on the side.
