Trying to find the best grill temperature for your steak, chicken or pork? It's a two-step process. First you need to know what's the right temperature for the cut of meat you've got. Then you need to figure out how hot your grill is.
Pricier grills have a temperature gauge
If you're a charcoal man, you'll need to buy a thermometer (boring) or stick your hand in the fire like your ancestors did (awesome).

To gauge the temperature of your grill, you perform a dangerous test. You put your hand about four inches above the grilling surface, and see how long you can hold it there. Sounds fun, yeah?

For a hot grill (500 degrees F): The coals will glow an angry red, and you'll only be able to hold your hand above them for two seconds.

For a medium-hot grill (400 degrees F): The coals are gray with a bit of a red underglow. You're able to hold your hand over them for three seconds only.

For a medium grill (350 degrees F): The coals are gray. You can keep your hand over the heat for five seconds.

High, medium-hot and medium will be the proper temperature for almost anything you care to cook on the grill.

High temperature: For thin cuts of meat, delicate vegetables, or anything you are searing (like steak or tuna).

Medium-hot temperature: For cuts of meat that must be cooked through, like chicken or pork.

Medium temperature: For thick cuts of meat, or hardy vegetables like peppers and potatoes. You want to keep the heat lower so these don't char before they are finished cooking.
